N.E. Fudge

Growing up my mom (Julee Judkins Hicks, Myreta's daughter) would stir this fudge forever in her big yellow Tupperware bowl.  She watched her dad make this fudge every single Christmas.

After hours of stirring, she would then pour the warm fudge into her 9x13 Tupperware.  Sometimes she would pour it into her greased Christmas tree molds.  After it had cooled in the fridge for a few hours we would spend Christmas Eve cutting the fudge into cubes and roll, roll, roll...into balls that she then rolled in coconut.  {I will mention YUCK, by the way} We rolled so many balls!  The balls would fill glass Christmas jars and then be delivered to all of dad and mom's families that they home and visit teach.  

Amanda has experimented lots with which is the best chocolate to use and this year we tried it mixing in our bosch; super successful!  

This was the first year I attempted making it by myself and I was so in heaven that it turned out so creamy and heavenly!  We made them for our Valentine's gifts this year instead of doing it for Christmas.  

Funny side story: While the fudge was cooling in the fridge my son, Ayson (4), opened the fridge and asked for chub.  "sorry, bud, we have no idea what chub is.  Can you show us?"  He pulled the big orange bucket of wheat over to the fridge, climbed up, and pointed to the fudge. "I want that! Chub!"  I think the new nick name will stick at our house.  

Here is the recipe for Grandpa's famous fudge.  Mom, it would be great to hear your memories associated with this fudge and your dad.

FIRST ~  In the bosch bowl mix:
22 oz  Sweet Chocolate (Amanda likes Lindt chocolate)
12 oz Chocolate Chips (small Chips Heresy’s)
6 oz real Butterscotch or Carmel (Small Chips)
16 oz of Marshmallow Cream
A total of 34-36  oz of chocolate.  a combination of sweet chocolate and chocolate chips.

SECOND ~ Stove Ingredients:
4 1/2 Cups Sugar
1 large can of condensed milk
1/2 stick of butter
1 t vanilla
Cook Sugar, Butter, Milk, and Vanilla on low until mixed.  Cook on medium heat stirring all the time without touching the sides.  Once it starts to boil cook for 6 min and then pour over mixture in a bowl and mix till all melted and blended. 

Pour into metal greased molds, a jelly roll pan, or 9 x 13 dishes to cool.  (We tried molding the fudge in the candy molds and they didn't work). 

After it is cooled, it is ready to eat.  To present it as a gift we roll in balls and roll the balls into cocoa, powdered sugar, or sprinkles.  One year I'm going to try to dip the fudge balls into more chocolate!
